Beef Taco Casserole
Ingredients:
1-16 oz package of 93% lean ground beef
1-15 oz. can black beans, rinsed and drained
1-15 oz. can corn, rinsed and drained
1-15 oz. can diced tomatoes, drained
1 C brown rice, uncooked
1 C skim mozzarella cheese, shredded
1 packet low sodium taco seasoning
2 garlic cloves, minced
1 TBSP. olive oil
Garnishes: chopped cilantro, diced green onion
Directions:
Cook rice according to package instructions. Once fully cooked, set aside.
Heat a skillet over medium heat, add garlic & 1 TBSP. olive oil. Once browned, add ground beef and taco seasoning.
Add in corn, beans, diced tomatoes and rice. Mix well.
Pour entire skillet into a 9x13 cooking dish & spread mixture evenly.
Top with mozzarella cheese & bake at 350 degrees for 20 minutes or until the cheese is fully melted.
Garnish with cilantro & green onion & enjoy!
