Cowboy Caviar


Ingredients:
  • 1 can reduced sodium black beans, rinsed and drained

  • 1 can reduced sodium white beans, rinsed and drained

  • 1 can corn, drained

  • 2 Roma tomatoes

  • 1 bell pepper (any color!)

  • 1 avocado

  • 1 jalapeno, deseeded

  • 1/2 red onion

  • Cilantro, chopped


For the dressing:

  • 1/3 C olive oil

  • 2 TBSP. red wine vinegar

  • 2 TBSP. lime juice

  • 1 tsp. sugar

  • 1/4 tsp. garlic powder

  • Salt & pepper, to taste


Directions:
  1. Chop tomatoes, bell pepper, red onion, and jalapeno into 1/2 inch, bite-size cubes and add to a large bowl. To make your life easier and to save time, use a veggie chopper like this one. Add in the black, beans, white beans, corn, and chopped cilantro.

  2. In a small bowl, whisk together the olive oil, red wine vinegar, lime juice, sugar, garlic powder, salt, and pepper.

  3. Pour the dressing over the salad and toss to coat evenly.

  4. Gently fold in the diced avocado just before serving.

  5. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

  6. Serve chilled with tortilla chips, on tacos, or as a side dish.
