One pot recipes have become more routine in our house lately. The less dishes this busy mama has to dirty, the better. Not to mention it seriously makes cooking all the more enjoyable when everything can be prepped and cooked in one pan.

Easy One Pot Taco Pasta


Ingredients:
  • 1 box of shell pasta (my favorite brand is Barilla, especially their line of protein pasta)

  • 1 lb. 93% ground turkey

  • 1 packet reduced sodium taco seasoning

  • 2 C chicken or beef broth

  • 1 C shredded cheddar cheese

  • 1/2 C diced tomatoes (with liquid)

  • 1/2 yellow onion, diced

  • 1/2 tsp. minced garlic

  • Chopped cilantro for garnishing


Directions:
  1. Heat a large pan over medium high heat. Spray the pan with olive oil.

  2. Brown ground turkey, onion, and minced garlic until cooked through.

  3. Add in the taco seasoning, broth, diced tomatoes, and uncooked pasta. Stir and bring to a boil.

  4. Once boiling, reduce to a simmer and cover with a lid. Stir occasionally for 12-14 minutes or until pasta is done.

  5. Remove the pan off the heat and add in shredded cheese. Stir until well combined.

  6. Garnish with freshly chopped cilantro and enjoy.

How to store taco pasta:


Storing: The taco pasta will last in the refrigerator for up to 4 days in an airtight container.

Freezing: You can freeze this recipe for up to 3 months. The pasta might get a little soggy in the freezer, but it will still be delicious!

Reheating: You can reheat this recipe in the microwave or on the stove. If the pasta feels dry, add a splash of water or broth when reheating.
