Easy One Pot Taco Pasta
Ingredients:
1 box of shell pasta (my favorite brand is Barilla, especially their line of protein pasta)
1 lb. 93% ground turkey
1 packet reduced sodium taco seasoning
2-3 C chicken or beef broth
1 C shredded cheddar cheese
1/2 C diced tomatoes (with liquid)
1/2 yellow onion, diced
1/2 tsp. minced garlic
Chopped cilantro for garnishing
Directions:
Heat a large pan over medium high heat. Spray the pan with olive oil.
Brown ground turkey, onion, and minced garlic until cooked through.
Add in the taco seasoning, broth, diced tomatoes, and uncooked pasta. Stir and bring to a boil.
Once boiling, reduce to a simmer and cover with a lid. Stir occasionally for 12-14 minutes or until pasta is done. *Add more broth if needed to continue cooking the noodles.
Remove the pan off the heat and add in shredded cheese. Stir until well combined.
Garnish with freshly chopped cilantro and enjoy.

Homemade Taco Seasoning Recipe:
3 TBSP. paprika
2 tsp. black pepper
2 tsp. chili powder
2 tsp. onion powder
1 tsp. garlic powder
1 tsp. cumin
1 tsp. salt

Storing: The taco pasta will last in the refrigerator for up to 4 days in an airtight container.
Freezing: You can freeze this recipe for up to 3 months. The pasta might get a little soggy in the freezer, but it will still be delicious!
Reheating: You can reheat this recipe in the microwave or on the stove. If the pasta feels dry, add a splash of water or broth when reheating.
