Pumpkin Spice Overnight Oats


Ingredients:
  • 1 1/2 C old fashioned rolled oats

  • 2 C unsweetened almond milk

  • 1/2 C canned pumpkin (not pumpkin filling)

  • 1/2 C Greek yogurt

  • 1 scoop vanilla protein powder

  • 3 TBSP. peanut butter

  • Optional garnish: chopped pecans


Directions
  1. In a large bowl, combine and stir all ingredients together. Evenly distribute into four jars or air-tight containers ( I love these overnight oat containers with the spoons!)

  2. Cover and store in the refrigerator overnight.

  3. Top with chopped pecans and enjoy cold.

Q: Do you eat overnight oats cold?

A: Typically yes, as that's what makes this such a quick and easy, on-the-go breakfast, but some people don't care for cold oats. If you prefer warm oats, you can warm them up in the microwave in 30-second increments.


Q: Can you use instant or quick oats? What about steel cut oats?

A: You can, but the oatmeal will have a much different texture. I personally prefer the texture of rolled oats but try it both ways and see which you prefer! If you want to use steel cut oats, know that this will result in a chewier, less creamy oatmeal than using rolled oats.


Prep & Storage:

You can make overnight oats ahead of time; store for up to 5 days in the fridge in an airtight container or specific overnight oat jars like these. You can make a single serving (just divide this recipe by 4 to get single serving portions) or feel free to double the recipe if you're feeding multiple mouths!



Add your favorite toppings:

  • chopped pecans go super well with this recipe but you can definitely use different nuts like chopped walnuts or pumpkin seeds to compliment the pumpkin spice flavors

  • top with granola and diced apple chunks to add even more flavor and texture

  • drizzle with peanut butter or almond butter
