Pumpkin Spice Overnight Oats
Ingredients:
1 1/2 C old fashioned rolled oats
2 C unsweetened almond milk
1/2 C canned pumpkin (not pumpkin filling)
1/2 C Greek yogurt
1 scoop vanilla protein powder
3 TBSP. peanut butter
Optional garnish: chopped pecans
Directions
In a large bowl, combine and stir all ingredients together. Evenly distribute into four jars or air-tight containers ( I love these overnight oat containers with the spoons!)
Cover and store in the refrigerator overnight.
Top with chopped pecans and enjoy cold.

A: You can, but the oatmeal will have a much different texture. I personally prefer the texture of rolled oats but try it both ways and see which you prefer! If you want to use steel cut oats, know that this will result in a chewier, less creamy oatmeal than using rolled oats.
