Sweet Potato & Ground Beef Skillet

Seasoned ground beef with crispy Brussels sprouts, perfectly tender sweet potatoes, all topped with cheesy goodness in a cast iron skillet! This sweet potato & ground beef skillet is a hassle-free, easy dinner for the entire family.

Cooking with a cast iron skillet is so under-rated in my opinion! Between Instapots, slow cookers, and Kitchen Aids, you’re probably rolling your eyes at another kitchen gadget to invest in. I know, I know - but trust me when I say – just get the dang cast iron skillet! It not only makes cooking a lot faster, but they function as a traditional skillet on the stove and are even oven-safe! What I specifically love about this recipe is everything is cooked in this one skillet - less mess, less dishes, less clean up. What's not to love?! Plus, cast irons are great for just about anything you’d normally bake in the oven or sauté on a stovetop. Anyway, let's get back to today’s recipe - we’re making Sweet Potato & Ground Beef Skillet!






Sweet Potato & Ground Beef Skillet


Ingredients:
  • 1-16 oz. package 93% lean ground beef

  • 2 medium size sweet potatoes, peeled and cubed

  • 1 C Brussels sprouts, cut in quarters (I personally include the leaves as well!)

  • 1/2 C shredded Mozzarella cheese

  • 1/2 C water

  • 1/2 yellow onion, diced

  • 3 garlic cloves, minced

  • 1 TBSP. olive oil

  • 2 tsp. garlic powder

  • 1-2 tsp. paprika

  • Cilantro, finely chopped

  • Salt + pepper, to taste





Directions:
  1. In a large cast iron skillet, heat olive oil over low heat. Add minced garlic and cook for 2-3 minutes or until fragrant.

  2. Add ground beef and season with garlic powder, paprika, salt and pepper and cook until browned.

  3. Add diced onion and cook for 3-4 minutes. Then add diced sweet potatoes and water. Stir together and cover with a lid. Cook for approximately 8-10 minutes until the sweet potatoes soften, stirring occasionally (see cooking tips for cooking time variations).

  4. Remove lid and add Brussels sprouts. Stir together and cook uncovered for an additional 3-4 minutes.

  5. Top with shredded mozzarella and allow it to melt. Remove skillet from heat and garnish with freshly chopped cilantro.

Cooking Tips:


  • You can buy pre-shaved Brussels sprouts and pre-cut sweet potatoes to help cut down on prep time

  • Feel free to use ground turkey or ground chicken instead of ground beef if you prefer a different flavor

  • The smaller you chop the sweet potatoes, the less time it will take to cook. Cooking times may vary depending on the size of your cubed sweet potatoes.

  • If you don't have a cast iron skillet, you can throw everything on a large baking sheet and bake it together all at once. I would still suggest cooking the ground beef first though. Then layer the sweet potatoes and Brussels sprouts and bake at 375º for 20-25 minutes or until sweet potatoes are fork tender. Top with the shredded mozzarella during the last 5 minutes.
